uno de mis propósitos para este año era no comer carne. ya han pasado dos meses y (aparte de los estragos a la hora de decidir qué cocino cada día) me siento muy bien y disfruto mucho de riquísimos platos sin carne como los gnocci hechos en casa.

para niños con corazón de pirata.

en los últimos días he estado haciendo zapatitos de bebé como estos. son de lana y angora, suaves, dulces y muy, muy cálidos.

trabajar con la lana de la que están hechos es un placer, elegir las telas y cortar círculos del tamaño de una moneda de cinco céntimos para forrar sus botones es muy divertido y hasta la gata sonríe cuando los ve terminados.

in the last days i´ve been crocheting these baby booties. they are made with wool and angora and they are soft, sweet and very, very warm.

working with the wool with which they are made is a pleasure, choosing matching fabrics and cutting out circles as small as a five cents coin to cover their buttons is very funny and even the cat smiles when she sees them finished.

la estacionalidad de los alimentos es todo un invento y está perfectamente coordinada con nuestras necesidades. el reloj de la naturaleza nos trae los productos que apetecen en cada temporada y nuestro organismo se beneficia y disfruta de su diversidad.

a mí me encanta comer tan sano, casero y natural como sea posible pero sobre todo en otoño me preocupo especialmente de cuidar mi alimentación.

entre otras cosas estamos en temporada de coliflor. la coliflor rebozada es un clásico pero últimamente el cuerpo también me pide sabores orientales. hoy he probado a añadir unas semillas de sésamo tostado al pan rayado y a combinarla con este tofu marinado con salsa de soja, limón, salsa de tomate, orégano y ajo.

sólo digo que he hecho bastante cantidad pero no ha sobrado nada...

tofu marinado al horno
2 cucharadas de zumo de limón
3 cucharadas de salsa de tomate
2 cucharadas de salsal de soja
1 ajo triturado en el mortero con un poquito de sal
2 cucharadas de aceite de oliva
2 cucharaditas de orégano
250 grs. de tofu

mezclar los ingredientes excepto el tofu en un bowl.
cortar el tofu en cuadrados, añadir a la marinada y mezclar bien. dejar reposar unas 2 horas.
precaletar el horno a 180º
colocar en una fuente de horno con la marinada por encima y hornear durante 15 minutos.

coliflor rebozada
1 coliflor
2 huevos
sal
pan rayado
sésamo tostado
aceite de oliva

cortar, lavar y cocer al vapor la coliflor. debe quedar al dente, es decir que podamos introducir fácilmente la punta de un cuchillo en los tallos pero sin que se deshaga.

salar y batir los huevos en un bowl.

mezclar en otro bowl el pan rayado con unas dos cucharadas de sésamo tostado.

rebozar la coliflor y freir en abundante aceite hasta que quede dorada.

servir la coliflor con el tofu.

food seasons is a great invent and it is perfectly coordinated with our needs. nature clock brings us the products we feel like eating in each season and our organism enjoys the diversity of food seasons.
i love eating as healthy, homey and natural as possible but in autumn i specially care about my alimentation.
amongst other things we are in cauliflower season. fried cauliflower is a classic but i´m in a mood for oriental flavors. today i´ve tried adding sesame seeds to the bread-crumbs batter and have combined the cauliflower with tofu marinated in soy sauce, lemon, tomato sauce, garlic and oregano.
i just say that i´ve prepared a big batch but there was nothing left...

roasted marinated tofu

2 tablespoons lemon juice

3 tablespoons tomato sauce

2 tablespoons soy sauce

1 smashed garlic

2 tablespoons olive oil

2 teaspoons oregano

250 grs. tofu

combine all the ingredients in a bowl except the tofu.

cut the tofu into cubes, add to the marinade and mix well. let it in the fridge at least 2 hours.

preheat the oven at 180ºC

put the tofu into an oven pan, pour the marinade over and bake for 15 minutes.

fried cauliflower

1 cauliflower

2 eggs

salt

breadcrumbs

toasted sesame seeds

olive oil

cut, wash and cook the cauliflower in vapor water. it must be al dente, we should be able to easily introduce a knife tip into the stalks but it shouldn´t easily crumble.

beat the eggs with salt into a bowl.

into another bowl mix the breadcrumbs with 2 tablespoons toasted sesame seeds.

coat the cauliflower in egg and breadcrumbs-sesame seeds and fry in oil until it is gloden brown.

serve the fried cauliflower with the tofu.

ayer pasé la mañana haciendo estas simpáticas y riquísimas pastas de miel y lavanda. tuvimos un día caluroso y lleno de luz pero mi instinto me pedía amasar, moler las flores de lavanda para aromatizar y dar forma a estas estrellas crujientes.

sin saber del cambio repentino de tiempo que nos esperaba hice un montón de estrellas y de pastas redondas con lo que afortunadamente ya estoy preparada para acompañar los tés que me va a pedir el cuerpo en estos días con divertidas y deliciosas pastas caseras.

mientras escribo este posts estoy calentando agua para llenar la primera tetera, a ver si consigo calentarme la nariz.

pastas de lavanda y miel

200 grs. de mantequilla atemperada

75 grs. de azúcar glass

25 grs. de miel

1 huevo a temperatura ambiente

350 grs. de harina

2 grs. de levadurina

2 grs. flores de lavanda molidas

mezclar la harina con la levadurina, y la lavanda molida.

poner la mantequilla en un bowl in mezclar bien con el azúcar glass y la miel. añadir el huevo y continuar mezclando con unas varillas metálicas hasta que se haya incorporado. añadir e ir mezclando poco a poco la mezcla de harina, levadurina y lavanda. al final ayudarse con las manos y, si es necesario, añadir más harina hasta conseguir una masa que no se pegue a los dedos.

hacer una disco con la masa y envolver en papel film. aplastar un poco dentro del papel film y dejar reposar en el frigoríco al menos 8 horas.

precalentar el horno a 180º.

enharinar la mesa de trabajo, extender la masa con el rodillo, cortarla con la forma deseada e ir colocando en la bandeja sobre papel de horno.

hornear hasta que los bodes empiecen a tomar un color dorado. sacar del horno, dejar enfriar.

yesterday morning i baked these funny and delicious honey and lavender shortbread cookies. even though we had a warm and sunny day my instinct asked me to knead, to grind aromatic lavender flowers and to shape these crunchy stars.

i didn´t know about the sudden weather change but i baked lots of stars and round shaped shortbread cookies so fortunately i´m prepared to have all the hot teas my body will ask me for in these days with funny and delicious home-made shortbread cookies.

i have water in the stove while i´m writing this post,

let´s see if i warm my nose.

honey and lavender shortbread cookies
200 grs. room temperature butter
75 grs. confectioners sugar
25 grs. honey
1 egg (room temperature)
2 grs. baking powder
2 grs. fresh grounded lavender buds
mix the flour, baking powder and ground lavender.
put the butter in a bowl and cream with the confectioners sugar and honey. add the egg and keep mixing until well incorporated. slowly add the flour mixture until combined. you can use your hands at the end and add more flour if needed until you have a not very sticky dough.

shape it into a disc, wrap with plastic and let it into the fridge for at least 8 hours.

preheat the oven at 180º C.

spread your work surface with flour, extend the dough and shape it with a cookies cutter. place the cookies on a baking sheet covered with baking paper and bake until the sides start to golden.

remove from the oven and let it cool.

es momento de decir 'hasta la próxima' a los helados (de queso de cabra con salsa de cerezas, de petit suisse con dos chocolates y de arroz con leche con chocolate blanco) de la temporada de verano '09 y aun no puedo creer todos los que se han servido.

la temperatura ha bajado a unos perfectos 20º, han llegado las castañas a los mercados y ya apetece dar la bienvenida a la nueva temporada de postres para acompañar a los tés y los cafés calientes.

en este comienzo de otoño estoy preparando tartaletas de limón con frambuesas, flan de chocolate y cardamomo con salsa de vainilla y tarta de trufa y mango. para acompañar estoy haciendo unas pastitas de mantequilla con canela y gengibre que se derriten en la boca.

cada vez disfruto más trabajando con harinas, chocolates, especias, frutas, lácteos... después de dos temporadas preparando postres para el público siento que domino muchas técnicas que requieren experiencia y conexión con las materias que tienes entre las manos y cuando veo el resultado me siento feliz.

pastas de mantequilla con canela y jengibre

it´s time to say 'see you soon' to the '09 ice creams season (goat cheese with cherry sauce, petit suisse with two chocolates and rice pudding with white chocolate) and i can not believe how much were served.

the temperature has decreased to the perfect 20ºC, chestnuts have arrived to the markets and it feels like saying hello to the new sweet season. it´s time of desserts for hot beverages.

in the beginning of this autumn i´m elaborating lemon and raspberries tartalettes, chocolate and cardamom puddings with vanilla sauce and truffle and mango cakes. i´m also baking cinnamon and ginger shortbread cookies that melt in your mouth.

i´m enjoying more and more working with flours, chocolates, spices, fruits, dairy products... after two seasons elaborating desserts for the public i feel that i manage very well with techniques that require experience and a certain connection with the ingredients you have in the hands and when i see the result i feel happy.

hay momentos en los que me duele el brazo de batir pero cuando lo veo todo terminado y recibo noticias de que he contribuido a crear un pequeño momento de placer para quienes han comido me vuelven inmediatamente las ganas de volver a empezar.

este post va dedicado a mi madre que anda ya varios días con ganas de que le dé alguna receta fácil, rápida y sabrosa para introducirla en su programa semanal.

yo suelo cocinar en función de lo que veo fresco y a buen precio en el mercado y creo que nuestra cena de hoy le puede encajar porque el hummus se puede preparar el día anterior y el tomate y pollo a la parrilla se hacen en un momento.

vamos a por ello:

se trata de hummus con pollo y tomate a la parrilla

para el hummus:

400 grs. de garbanzos cocidos + un poco del agua de coción para hacerlo más ligero

3 cucharadas de tahini (pasta de sésamo sin tostar que puedes comprar en el herbolario)

1 ajo grande o 2 pequeños

unas ramitas de perejil o cilantro (yo uso los dos porque tengo plantas de los dos y sólo tengo que abrir la ventana coger la tijerita y servirme -también los tengo que regar todos los días pero eso es otra historia)

1/2 cucharadita de comino molido

1/2 cucharadita de pimentón (dulce o picante, como prefieras)

el zumo de 1/2 limón

3 cucharadas de aceite de oliva virgen

sal y pimienta

poner todos los ingredientes en un bol y batir hasta que quede una pasta parecida a un paté ligero. probar de sal y rectificar al gusto.

servir con un con pimentón espolvoreado por encima y un chorrito de aceite de oliva.

resto del plato:

filetes de pechuga de pollo

tomate cortado en rodajas de 1 cm aprox.

Salpimentar y dorar en la plancha.

Siento no tener fotos del plato terminado pero sólo hay que servir unas tres o cuatro cucharadas de hummus acompañando al pollo y al tomate.

this post is for my mom who has been a few days asking me for an easy, fast and tasteful recipe to be introduced in her weekly home-cooking program.

i usually cook depending on what i find fresh and at a good price in the market and i think that our dinner for today may fit well in her schedule because the hummus can be prepared the day before and the grilled chicken and tomatoes can be ready in a second.

let´s go for it

hummus and grilled tomatoes and chicken breast

for the hummus:

400 grs. cooked chickpeas + a little bit of the water from boiling to soften the hummus

3 tablespoons tahini

1 big garlic clove or 2 smalls

a few springs of parsley or coriander (i use both because i have fresh plants of both and just need to take the scissors and service myself -i also have to water them everyday but that´s something different)

1/2 teaspoon ground cummin

1/2 teaspoon ground paprika

juice of half lemon

3 tablespoons virgin olive oil

salt and pepper

put all the ingredients in a bowl and purée with an immersion blender until smooth or use a food processor. taste and adjust seasoning as necessary.

you can garnish the hummus with extra paprika and a thread of extra virgin olive oil.

rest of the meal:

chicken breast in fillets

tomatoes 1 cm. thick sliced

salt and pepper

grill the chicken breast fillets and tomatoes and season with salt and pepper.

i´m sorry i don´t have photos of the finished dish but to serve it you just have to put in a plate 3 or 4 tablespoons of hummus and the grilled chicken and tomatoes.

he retomado mi relación con la repostería. empezó al salir de la adolescencia, antes de entrar en la universidad. entonces no había internet por lo que cogía libros antiguos de mi madre, pedía de cumpleaños los míos propios, recortaba las páginas de cocina de los suplementos dominicales... todavía se pueden encontrar entre las páginas de mi primer libro de repostería hojas de apuntes de derecho llenas de recetas en el reverso.

ha sido un feliz, dulce y divertido reencuentro. el primer reto han sido los macarons de chocolate. en estas fotos no se ve pero los rellené con una ganache de chocolate y naranja y quedaron algo más que deliciosos.

también me he atrevido con un triple mousse de chocolate, una tarta de queso con salsa templada de naranja, un mousse de yogur con crema de fresa, un pastel de zanahoria con crema de queso, un surtido de pastas y una tarta de chocolate con tejado de limón.

i´ve taken up again baking. i started baking at the end of my adolescence, before getting into university. then i didn´t have internet and i used to take my mom´s old books, i used to ask for my owns for my birthdays, i used to cut the cooking pages from sunday magazines... you still can find between the pages of my first baking book some university sheets filled with recipes in the back.

it´s been a happy, sweet and funny reunion. the first challenge has been chocolate macarons. these photos don´t show the chocolate and orange ganache filling but the were delicious.

i´ve also dared to make a triple chocolate mousse, a cheescake with warm orange sauce, a yogurt mousse with strawberry cream, a carrot cake with cheese cream, assorted shortbreads and a chocolate cake with lemon roof.

ayer escuché en las noticias que en los próximos días se va a iniciar en el bierzo (león) la construcción de una planta de captura de co2 cuya función consiste en capturar el co2 emitido por centrales térmicas, envasarlo y transportarlo hasta el lugar de su posterior almacenamiento geológico, es decir, están buscando (al parecer todavía no lo han encontrado) un lugar que según cecilio quesada, del igme, serán emplazamientos de una cavidad similar a la de los pozos de peróleo lo que equivale a una roca permeable para inyectar el fluido de dióxido de carbono que esté separada por otra en su lateral y que por encima sea un sello impermeable para evitar escapes de fluido.

esconder la suciedad debajo de la alfombra no convierte la casa en un lugar limpio. no me gusta que las instituciones españolas y europeas financien y apoyen este tipo de proyectos que empaquetan una herencia sucia, peligrosa y destructiva para las futuras generaciones y que convierten el suelo que pisamos en un suelo minado. ¿quién puede disfrutar de un paseo por un lugar sabiendo que las rocas que le rodean están llenas de dióxido de de carbono?

creo que si la naturaleza pudiese hablar y dar su opinión gritaría un altísimo NO ante la intención de utilizarla para alojar residuos tóxicos.

yesterday i heard in the news that in the next days starts in the coal mining region of el bierzo (leon-spain) the construction of a co2 capture plant. the plant will be placed near a coal power plant and will capture co2 from the atmosphere, it will package and transport it to a geological storage for its geological sequestration.

this means that they are trying to find (it has not been found yet) a place similar to an oil well that will be a permeable rock to inject the co2 liquid with an impermeable rock on top of it to avoid liquid leak.

hiding the dirt beneath the carpet doesn´t make a clean house. i don´t like that spanish and european institutions support this kind of programs that storage a dirty, dangerous and destructive heritage for future generations and that mine the soil we step in. who can enjoy a walk knowing that the rocks around are filled with carbon dioxide?

i think that if nature could talk and express an opinion she would shout for help and say NO to its use as a toxic waste storage.

ya se puede ver la actualización de la página web de 'thesummerhouse'. ahora en español y en inglés y con nuevas tarjetas bordadas.

este frío me ha provocado una verdadera adicción a las sopas y los platos de cuchara, cada día al menos una sopa o una crema. hoy han sido sopa de cocido y crema de guisantes con martini además de esta riquísima 'pringá'.
